Belgian-Swiss chocolate giant Barry Callebaut launched a new type of chocolate. The pink chocolate is made from a particular type of cocoa bean, giving its fruity flavour and remarkable colour.

“The chocolate was created from a selection of many different types of cocoa beans”, spokesperson Korneel Warlop said. Allegedly, the search for that particular type of cocoa bean took thirteen years. The chocolate manufacturer collaborated closely with German Jacobs University. The “ruby” name also refers to the type of cocoa bean used during the manufacturing process. It revealed the new type of chocolate on Tuesday, in the Chinese city of Shanghai.
“We’re looking forward to working with our partners on introducing this innovative breakthrough to the market and making the new Ruby chocolate category available to chocolate manufacturers and consumers around the world as the fourth reference next to Dark, Milk and White chocolate”, Chief Innovation & Quality Officer Peter Boone said.
It has been eighty years since the introduction of the third type, when Nestlé revealed white chocolate.
